Bar Inventory Auditor

software platform (Baro MATS) and with hands-on audit, controls and reporting
services.

include The Bombay Canteen, Americano, Izumi, The Table, Hundo Pizza, Le15 and
La Folie.
Bars are our fastest-growing area of work. Our clients want an independent
third party to walk in, count the bar, and tell them the truth about their
stock. That is this job.
THE ROLE
As a Bar Inventory Auditor, you are the client's independent check on their bar.
You count the bar. You compare the count against the system and against sales.
You find the gap. Then you sit with the bar team and find out why the gap
happened.
This is not a bartending job. You will not make drinks or work service. You will
work with a scale, a tab sheet, a laptop and a bar team that must answer your
questions.
Every audit ends with a number and a reason for that number. The reason matters
as much as the number.
You will travel to client bars across Mumbai. Most counts happen before the bar
opens or after it closes.
You will report to the Reporting Manager.
WHAT YOU WILL DO
Count and verify
- Count full and open bottles across the bar counter, the back bar, the cellar
and the beverage store
- Weigh or estimate open bottles with a consistent method, every time
- Count draught beer, wine by the glass, kegs, cocktail batches, infusions,
syrups, purees, bitters and garnishes
- Count non-chargeable stock: staff drinks, tastings, brand promotions,
complimentary pours, wastage and breakages
Find the variance
- Compare the physical count against the system stock in Baro MATS
- Compare theoretical consumption from POS sales against actual consumption
- Calculate pour cost and beverage cost for the outlet and by category
- Flag the bottles and the categories where the money is leaking
Investigate the variance
- Sit with the bartenders, the bar manager and the storekeeper and ask what
happened
- Separate the honest causes from the ones that need escalation. Honest causes
include over-pouring, a wrong recipe in the system, an unrecorded transfer, a
missed complimentary bill or a spillage nobody wrote down
- Check the bar recipes against what the bar actually pours
- Run leakage checks on POS data: NC and complimentary bills, discounts,
cancelled or modified KOTs, and unusual patterns
- Write the finding in plain language, with the evidence behind it
Report and improve
- Prepare the bar variance report, the pour cost report and the dead stock and
slow-mover list
- Present the findings to the client without heat and without blame
- Recommend par levels, storage controls and counting routines that stop the
same leak from coming back
- Keep clean records of every count, every photograph and every sign-off
WHAT THIS ROLE IS NOT
- It is not a bartending or service role
- It is not a kitchen or food inventory role
- It is not a desk-only analyst role. You will be inside bars, most days
WHO YOU ARE
- 1 to 4 years behind a bar, in a beverage store, or in bar stock control. Bar
experience is the one thing we cannot train
- You know Indian and imported brands across whisky, vodka, gin, rum, tequila,
brandy, beer, wine and liqueurs
- You know bottle sizes, peg sizes and how many pegs come out of a bottle
- You can count an open bottle the same way twice
- You understand what an infusion, a batch and a pre-mix do to a stock count
- You know why non-chargeable pours must still be recorded
- You are comfortable with Excel and with numbers on a screen
- You can ask a bartender an uncomfortable question and keep the conversation
calm
- You are honest about a count, even when the number is bad news
- You can travel across Mumbai and work early morning or late night shifts
- You can speak and write clear English. Hindi or Marathi helps on the floor
BONUS POINTS IF YOU HAVE
- Worked as a bartender or bar manager and now want a numbers role
- Run stock takes for a bar group or a hotel beverage department
- Used a POS system such as Petpooja, or an inventory system
- Worked on cocktail costing or bar menu costing
- Knowledge of excise records and permit room paperwork in Maharashtra
