Role Description The Head Chef – Bakery is a full-time, on-site role based in Bengaluru, responsible for leading all bakery and viennoiserie operations. This role oversees daily production of breads, croissants, pastries, and desserts, ensuring consistency in taste, texture, and presentation. The Head Chef plans menus, develops new bakery items aligned with the brand, and manages recipes, costing, and inventory for bakery ingredients. Day-to-day responsibilities include supervising and training bakery staff, assigning production tasks, enforcing food safety and hygiene standards, and coordinating with the kitchen and café teams for smooth service. The Head Chef also monitors quality, manages baking schedules, maintains equipment, controls wastage, and contributes to seasonal and promotional product development.
Qualifications
Strong expertise in professional baking, pastry, and viennoiserie techniques, including dough preparation, lamination, proofing, and finishing.
Experience in menu planning, recipe development, and product innovation for bakery and café-style offerings.
Proficiency in kitchen operations management, including staff supervision, training, scheduling, and workflow optimization.
Solid knowledge of food safety, hygiene, and HACCP or equivalent standards, with a track record of maintaining compliant practices.
Ability to manage inventory, purchasing, cost control, and portioning to meet quality and margin targets.
Strong organizational and time-management skills to handle high-volume production and multiple concurrent orders.
Effective communication and leadership skills, with the ability to build a collaborative, respectful, and performance-driven team culture.
Prior experience as Head Chef, Executive Pastry Chef, or Senior Baker in a premium café, bakery, or patisserie environment.
Relevant culinary or bakery/pastry certification or degree is preferred; equivalent hands-on experience will be considered.
Willingness to work early mornings, weekends, and peak hours as required by café operations.
