Role Description This is a full-time, on-site role based in Kolkata for Indian Chef Commi 1, Commi 2, and Chef de Partie (CDP) – Indian. The role involves preparing and cooking Indian dishes, assisting in menu execution, and ensuring food quality and presentation align with hotel standards. Daily tasks include mise en place, operating kitchen equipment safely, following recipes and portion controls, and maintaining proper food storage and stock rotation. Team members support smooth kitchen operations during service, coordinate with senior chefs, and adhere to hygiene, safety, and sanitation procedures as per hotel and regulatory requirements. The CDP will also guide junior team members, help train Commis, and contribute to menu improvements and consistency in Indian cuisine offerings.
Qualifications
Strong skills in Indian cuisine preparation, including knowledge of regional dishes, spices, and traditional cooking methods.
Experience with professional kitchen operations, including mise en place, food safety, sanitation, and equipment handling.
Ability to follow standardized recipes, maintain portion control, and ensure consistent taste and presentation.
Teamwork and communication skills to collaborate effectively with chefs, stewards, and service staff during busy operations.
Time management and organizational skills to handle multiple orders, prioritize tasks, and work efficiently under pressure.
Prior experience as Commi or CDP in a hotel or restaurant environment, preferably in Indian cuisine.
Relevant culinary education or certification from a recognized institute is an advantage.
Willingness to work flexible hours, including weekends and holidays, as per hotel operational requirements.
