Restaurant captain

Sr. Captain; North Goa
One of our clients runs one of Goa's busiest beachfront addresses. Two hundred covers on a Saturday is routine. They are not looking for someone who can manage that volume. They are looking for someone who can make table 14, on their third visit this season, feel like the only table in the room, while table 15 waits exactly as long as they should and not a minute more.
That is the job. Everything else is detail.
The role
You will run the floor during the busiest sittings of the season. You will train the Captains and Servers around you, because the standard you hold is the standard the section learns. You will be the one who notices the regular before the host does, who reads a birthday from a booking note and does something about it, and who corrects a junior colleague's mistake before the guest ever sees it.
What we're looking for
Bachelor's degree in Hospitality Management or equivalent
6 to 8 years of experience, with genuine time spent as a Captain, not simply the title
Prior experience in Goa or the Middle East strongly preferred
A track record of returning guests who ask for you by name
The discipline to hold a standard on a slow Tuesday exactly as you would on a full Saturday
