Head Chef | Galway Hooker

The Galway Hooker Irish Pub is looking for an experienced and hands-on Head Chef to lead our kitchen team and take ownership of the day-to-day kitchen operation.
Located on The Esplanade, just moments from Scarborough Beach, The Galway Hooker is a lively Irish-style pub with a strong local following. We’re known for traditional Irish and pub-style food, Guinness, live music, sport, quiz nights and regular food specials.
We’re looking for a Head Chef who enjoys being hands-on, knows how to lead a team and can deliver great food consistently across busy services.
What you’ll be doing:
Lead and develop the kitchen team
Take ownership of the day-to-day kitchen operation
Plan and manage preparation and service
Maintain food quality, consistency and presentation
Manage ordering, stock control, stocktakes and wastage
Monitor food costs and kitchen budgets
Develop and maintain kitchen procedures and standards
Manage food safety, hygiene and compliance
Train and support the kitchen team
Work closely with the Venue Manager and wider leadership team
Be hands-on and lead by example during service
What we’re looking for:
Minimum 2 years’ experience as a Head Chef
Strong background in Irish, European or quality pub-style cooking
Proven experience leading and developing a kitchen team
Strong time management and organisational skills
Hands-on approach and willingness to get involved in every part of the kitchen
Calm and confident under pressure
Strong understanding of food safety, stock control and kitchen costs
Reliable, proactive and able to take ownership
