We are looking for an experienced Chef / Kitchen Master specializing in Arabian cuisine to join our growing Cloud Kitchen in Chennai.
The ideal candidate should have hands-on experience preparing Mandi, Kabsa, Tawa, Grill, Alfaham, Shawarma, Kebabs, Arabian rice dishes and related Arabian cuisine. Candidates with strong experience in other high-volume restaurant or QSR kitchens are also encouraged to apply.
Key Responsibilities
Prepare and execute Arabian and Middle Eastern dishes to consistent taste and quality.
Handle a wide range of Arabian rice preparations, including Mandi, Kabsa and other traditional aromatic rice dishes.
Prepare different styles of Biryani, including Ambur, Malabar, Chennai and Hyderabadi.
Handle Chicken, Mutton and Fish preparations, including marinades, tawa, grills, roasting and other cooking methods.
Prepare Alfaham, Shawarma, Kebabs, grilled meats and other Arabian-style preparations.
Maintain consistency in taste, portion size, presentation and food quality.
Manage daily kitchen preparation and mise en place.
Handle bulk cooking and high-volume food production efficiently.
Maintain food safety, hygiene and kitchen cleanliness standards.
Monitor raw materials, wastage and portion control.
Train and supervise junior kitchen staff where required.
Document and follow standardized recipes and preparation processes.
Maintain consistency during peak lunch and evening service.
Work closely with the management team to develop, test and improve menu items.
Take ownership of kitchen operations and ensure smooth day-to-day production.
Qualifications
Strong practical knowledge of Arabian / Middle Eastern cuisine.
Proven experience working as a Chef, Kitchen Master, Master Cook or equivalent senior kitchen role.
Mandi experience is highly preferred, but not mandatory.
Experience with Kabsa, Arabian rice, Tawa, grills, Alfaham, Shawarma and Kebabs is highly valuable.
Experience with multiple styles of Biryani is an advantage.
Candidates with experience in other high-volume restaurant, QSR, catering or cloud-kitchen operations are encouraged to apply.
Strong understanding of ingredients, spices, marinades, cooking methods and flavour profiles.
Ability to work in a fast-paced, high-volume kitchen.
Good understanding of food safety, hygiene standards and kitchen best practices.
Ability to manage kitchen preparation, workflow, timing and service requirements.
Strong skills in food presentation, portion control and maintaining consistent taste and quality.
Ability to train and guide kitchen staff.
Reliable, disciplined and able to take ownership of kitchen operations.
Good communication and teamwork skills.
Physical stamina to work on-site for extended periods, including weekends and peak hours as required.
Relevant culinary certification or formal training is preferred but not mandatory; hands-on experience is highly valued.
Passion for producing great-tasting food consistently.
